How is Honeycomb Made?

We make our own lovely honeycomb here in our factory. Although the recipe is quite simple, the skill is to create a consistent product. Therefore, maintaining the correct temperature is crucial to its success. Essentially, the ingredients are castor sugar, golden syrup, and bicarbonate of soda. It’s the addition of the bi-carb during heating that helps create bubbles and a honeycomb-like structure. While the mixture is still hot, we roll it out to cool on trays. Once it’s cooled, we can then break it up and add it to a tumbling machine that creates the consistent shapes ready for coating. Finally, it’s off the coating area to be drenched in a variety of delicious Carob coatings.
